Arbutus fruit vinegar can be made using the unripened fruit of the arbutus tree. Put the fruit in a glass jar along with a few leaves of laurel and some white wine vinegar.

Then, leave the mixture to macerate for a little while and once its ready, crush the fruit directly in the jar and filter the remaining liquid.

The result is a delicious vinegar that can be used for a wide variety of vinaigrettes or toppings. You can even sprinkle a few drops on some Italian gelato or Chantilly cream-based desserts.
