AUGUSTO TOCCI

Terræaltrove, italian experience

 

Graduated in Forest Science at Florence University he has worked all his life in the world of forests and environment. Researcher at the Institute for Experimental Forestry of the Ministry of Agriculture, and was Director for over a decade. He has always transmitted his vision of the forest as an invaluable “pantry” of food and medicines.
Tocci has continually disclosed the secrets of the forest, creating a unique gastronomy based on mushrooms, truffles, berries and medicinal herbs, he was the first to open the roads for cooking with new ingredients. Even in the 80’s he was called to the Rai as a guest in the most important programs such as Linea Verde, Unomattina, Geo & Geo, La Prova Del Cuoco and Casa Tocci on local stations, leading directly on the table of Italians his cooking and knowledge of the forest. He is the author of thirty books and over one hundred scientific publications and collaborates with national trade magazines.
Of the many books written we remember more those related to Rai transmissions: DAL BOSCO ALLA TAVOLA gastronomic stories and not only (Linea Verde); DALL’ORTO ALLA TAVOLA (UnoMattina); DALLA FATTORIA ALLA TAVOLA (Prova del Cuoco); CURIOSITA’ NEL GUSTO DEI FIORI; TARTUFO the pleasure of perfume.
Worthy of particular note is the series that covers the historic kitchen: TACCUINO ETRUSCO, TACCUINO MEDIEVALE, TACCUINO RINASCIMENTALE; and the series that is the effect of the herbal plants of the forest: BOSCO COME FARMACIA, MENSA SEMPRE DI TURNO, LE PIANTE SELVATICHE CI NUTRONO E CI CURANO. On the cover of the latter we also find Prince Charles, an admirer of cooking with wild plants of Augusto Tocci.
From fortunate alias “Lo Gnomo del Bosco” given to him by Antonella Clerici, a new series was created about the products of the earth with anecdotes, recipes and many curiosities of country life and the children’s games of earlier times: VITA DA GNOMI NUTRITIMENTO DEL CORPO E DELLO SPIRITO, LA FIABESCA CUCINA DEGLI GNOMI.
