There are millions of ways to cook eggs but the Senatello style of cooking eggs, inspired by a lumberjack from Monte Fumaiolo, Italy, is one not to miss.

Boil some red wine and create a whirlpool with a perforated wooden spoon by stirring clockwise. Drop the eggs in slowly to poach. Remove the eggs one by one from the water and place on anise leaves. Keep the remaining wine and infuse with anise leaves.
