Territory and Vineyard: Cortona is an historic Etruscan town in Tuscany located in the Val di Chiana valley near Trasimeno Lake. The vines used to produce this wine reach over 10 years in age and are located on vineyards surrounding the small town of Pietraia at an altitude of approximately 300 meters. These vineyards feature mixed soil composition while the vines are cordon-spurred.
Flavour Profile: This wine captures all of the Sangiovese grape’s unaltered beauty and intrinsic characteristics. With its ruby red colour, fruity notes, and well-balanced structure, Evviva is a fresh wine that is bright and easy-to-drink, not to mention it pairs marvelously with a wide array of dishes.
Winemaking Process: Fermented in temperature-controlled stainless steel tanks set at 25°C using the traditional pumping over technique and macerated with skins on for 8 to 10 days
Aging: Aged for at least 6 months in cement tanks then for another few months once bottled.
Suggested Wine Pairings: Pair with appetizers, pasta or rice dishes, white and red meat or fish.
