Boil the potatoes in salted water. Once cooked, peel and mash them. In a pan aside, sauté some garlic, parsley and Italian sausage with two tablespoons of tomato sauce then blend in the food processor. In a mixing bowl, blend the mashed potatoes and sausage mixture, adding an egg, salt, pepper, nutmeg and parmesan cheese. Blend well.
Prepare your pasta dough and roll it out in strips, doling out dollops of the filling. Seal the pasta with another strip on top and slice into 5 x 10 cm squares. Make sure to close the edges properly.
Grill the tortelli. Serve hot.
